Karak, not masala. Strong tea cooked down with milk and sugar until it turns the colour of brass — simple, familiar, warm all the way through. Spice stays in the background where it belongs, and the dry-down softens into vanilla.

• Top Black tea leaf, a suggestion of cardamom
• Heart Cooked milk, brown sugar
• Base Vanilla, tonka, warm woods
